Espresso brownies with golden summer zucchini

Ingredients

  1. 1 cup almond butter
  2. 1 1/2 cup peeled, seeded and shredded golden zucchini
  3. 1 / 3 cup agave
  4. 1 egg replacer or flaxseed egg
  5. 1 teaspoon vanilla
  6. 1 teaspoon baking powder
  7. 1/2 teaspoon cinnamon
  8. 1 teaspoon cocoa powder
  9. 1 teaspoon ground espresso (add 1/2 teaspoon more for a stronger flavor)
  10. 1/4 teaspoon salt
  11. < li>1 cup semi-sweet vegan chocolate chips

Procedure

  • Preheat the oven to 350°C.
  • Mix all the ingredients in a large bowl.
  • In a greased skillet pan 9×9 pan.
  • Bake for 25 to 30 minutes or until a toothpick comes out clean.
  • Let cool, cut into squares and enjoy!
