Eggplant caviar

Ingredients

  • 4 Eggplants
  • 1 Garlic Tooth
  • Thyme Fresh
  • Fresh Rosemary
  • Fresh Cilantro Leaves
  • Ground Black Pepper
  • Olive Oil
  • Lemon Juice
  • Fresh Cilantro

Preparation

The preparation of this great vegan recipe idea is super simple, we will start by taking the aubergines, wash them, peel them and then cut them into strips and then chop these strips. All just using the knife.

Once everything is well chopped, we will put it together in a container with the clove of garlic, well chopped, in addition to the sprigs of thyme, rosemary, a little salt and a dash of olive oil. Let stand for an hour.

Now with our mixture well combined, we will proceed to the oven, placing it in an oiled container. Cook over medium/low flame until you see al dente cooking (approximately 20 minutes). Once ready, let cool quietly.

When our mixture is cold, at room temperature, we will cook again, but now in a pan, with abundant olive oil. The idea is to sauté the mixture and cook for an extra 10 minutes.

Now with this step completed, we will eliminate all excess oil, and add chopped fresh coriander, lemon juice, a little salt and black pepper .

To serve, it can be placed with traditional toast or toast fried in oil, it can also be used as an exquisite caviar for vegan or vegetarian meals.
