Easy and vegan sweet potato croquettes

Very good to all! We start the week with a new recipe, quite easy and accessible ingredients. I bring you some vegan sweet potato croquettes suitable for beginners. The interior texture is very tender, creamy, as is typical of sweet potatoes, but the exterior has a fine crunchy layer that is amazing.

The interior is very simple to prepare, I have made this recipe as easy and basic as possible to make it suitable for people who have no idea of cooking. The initial dough is a delicious mix of sweet potato cooked with spices. Simple, cheap, easy. On this occasion, I have accompanied it with a little salad, to make it lighter, and a little homemade vegan mayonnaise sauce (vegan), to make it tastier.

Ingredients

1 Sweet potato
A pinch of black pepper
A pinch of chopped parsley
A pinch of onion powder
A pinch of salt
Breadcrumbs
Olive Oil
Sunflower Oil

Step by step

  1. Peel, cut into cubes and cook the sweet potato until it can be easily pierced with a fork.
  2. Strain the water and pour the sweet potato pieces onto a plate.
  3. Now, mash them with a fork until you get a homogeneous, creamy mass, and add the spices (black pepper, chopped parsley, onion powder and salt to taste) along with a drizzle of olive oil.
  4. Place plenty of breadcrumbs in a second dish, preferably deep.
  5. On the other hand, take medium portions of sweet potato and We give it a rounded shape with our hands.
  6. We coat in the breadcrumbs, and roll again with our hands to ensure that the breadcrumbs adhere well. Reserve.
  7. Repeat the process until the dough is finished.
  8. In a small frying pan, heat 2 or 3 fingers of Sunflower oil.
  9. When the oil is hot (you’ll notice it because it will start to bubble), fry the croquettes by immersing them in the oil for several seconds on both sides, until they get a toasty color and a crunchy texture.
  10. Time may vary depending on the the temperature of the oil and the size of the sweet potato croquette.
  11. Remove from the oil and let it rest for a few minutes. We serve hot.
