Apricot and oat energy bars

The truth is that dried fruits are ideal for those who need a healthy source of simple carbohydrates. For example, the other day we made a very traditional recipe that is also ideal for athletes, and that is prepared for with dried figs.

  • 200 gr. of orejones
  • 140 gr. of fine oat flakes
  • 100 gr. of ground raw almond
  • 60 gr. of coconut oil
  • 40 gr. of agave syrup
  • 2 cc of ginger powder
  1. First, we mix the coconut oil with the oatmeal. If the coconut oil is solid (it usually happens in cold weather), we heat it in a water bath or in the microwave for a few seconds.
  2. We take 150 gr. of the previous mixture and grind it together with the dried apricots, the ground almonds, the agave syrup and the ginger. We will reserve the rest of the mixture of oats and coconut oil to decorate at the end.
  3. Line a rectangular container with plastic wrap. Pour the mixture into the container, pressing and leveling well so that there is a compact bar with the perfect shape. We cover with the mixture of oats and coconut oil that we had reserved and press again so that the oat flakes stick to the dough.
  4. Let the bar cool in the fridge for at least a couple of hours.
  5. When the dough has hardened, unmold and cut the bars.
