Double vegan mushroom and spinach sandwich with spiced cream.

Good morning guys! We start with the second recipe of the year. Today I bring you this double vegan sandwich stuffed with mushrooms and spinach with a spicy cream.

This recipe is quite easy, it is a simple sandwich to prepare that what is special about it is the creaminess provided by the sauce with which we mix the mushrooms and spinach. It is not exactly a vegan sandwich designed to take to school, but rather for a day at home or a picnic, or those moments when we have a little more time.

Ingredients

Slices of sandwich bread
3 handfuls of spinach
1 Tomato
1/2 onion
4 handfuls of mushrooms
A pinch of salt
Parsley
Black pepper

1 cup milk soy without sugar + reserve
4 teaspoons of Corn Starch (known as Maizena or fine corn flour).

Step by step

  1. We will start by preparing the sauce. To do this, heat a splash of olive oil in a frying pan over medium heat and add one of the garlic cloves, peeled and cut in half.
  2. When the garlic is toasted on both sides, add the cup of soy milk, the 3 teaspoons of garlic powder and leave until it begins to boil.

  3. Meanwhile, peel and cut a medium-sized potato into small pieces. Bring another small pot of water to a boil and bring to a boil, put the potato pieces inside and cook until tender.
  4. In the other pot, add 6 teaspoons of nutritional yeast (or more), a pinch of salt, thyme, generous oregano and a long squeeze of lemon.

  5. Now, we take the 4 teaspoons of cornstarch and add them very little by little -better if we sift it- .
  6. We lower the heat to medium-low power, add plenty of pepper and with a few rods, stir quickly to prevent lumps from forming. Quickly, because it will thicken in a few minutes.

    What will give our sauce creaminess is the Corn Starch, which when mixed with hot vegetable milk will create a slightly thick cream. You can compensate for the density by adding more starch or more non-dairy milk.

  7. When the sauce begins to thicken, turn off the heat.

  9. Reserve the cream and go for the filling.
  10. Take the mushrooms and the remaining garlic, slice them and put them in a pan with a splash of olive oil, black pepper and parsley. We sauté them until golden brown.
  11. Now there are two options. If, like me, you want to make the double sandwich separated by flavours, remove the mushrooms when they are golden brown, set them aside, and then sauté the onion and spinach separately. Or, we skip it all together, this goes to taste.

  12. When we have all the roasted vegetables, we mix them with the sauce (again separately or together).
  13. If the sauce, after resting, is very thick, add a little vegetable milk and heat for half a minute so that it regains its creaminess.
  14. Now we are going to toast the bread on both sides. Then we fill it with the cream, adding a little more pepper, nutritional yeast and salt on top. Cover with a couple of tomato slices and close with another slice of bread.
  15. Place another layer of filling on top and close with the third and last slice of bread.
  16. Serve the freshly toasted double vegan sandwich, warm, and with a very creamy sauce!
