Very good to all! Today I bring you a recipe that I improvised with the leftovers I had at home. I am talking about this delicious and easy rice curry with vegetables: green asparagus and oyster mushrooms, which I have accompanied with a few bites of heura (a vegetable protein derived from legumes, gluten-free and vegan) well toasted.

This has been purely improvised and, the truth is that it has been so delicious that I wanted to take the opportunity to share the recipe with you. In fact, the other day we prepared something similar but using coconut milk instead of broth, and it was simply spectacular. It is more satiating but also richer in saturated fat, so today I have prepared it with vegetable broth.


1 cup of round or bomba rice
2 cups of vegetable broth or water
5 green asparagus
1 onion
2 garlic cloves
4 large oyster mushrooms
Cumin powder
Sweet paprika
Garlic powder
Olive oil
Optional: 1/2 box of Heüra bites

Step by step

  1. Peel and chop two garlic cloves and the onion, and sauté over medium heat.
  2. When they begin to Poach, chop the asparagus and add them.

  3. As long as the ingredients are, cut the oyster mushrooms into slices and add them together with the heura bites, if you are going to use it too.
  4. Sauté until golden brown.
  5. Add the cup of round rice to the pan and stir. Brown for a minute.
  6. Now, we reserve 2 cups of vegetable broth or water, but we are going to add them little by little.
  7. Add a little of the broth until it slightly covers the rice and remove.

  8. Keep over medium heat, add 2 tablespoons of curry, 1/2 of cumin, a touch of sweet paprika and generous garlic powder.
  9. Keep over heat medium, stirring gently and adding the broth little by little,  until the liquid is consumed and the rice is cooked.
  10. Repeat this process until all the broth is gone and the rice is cooked and with a syrupy texture.
  11. And that’s it to eat!
