Curried mango with basmati


  • – 1/2 julienned onion
  • – 1 sliced garlic
  • – 1 sliced carrot
  • – 1/2 mango in thick julienne
  • – 2 teaspoons red curry paste ( 1 if you don’t want it very spicy)
  • – 1/2 teaspoon yellow curry powder
  • – 1/4 teaspoon turmeric in powder
  • – 1 generous tablespoon of coconut butter (or coconut cream)
  • – 1 pinch of ground black pepper (if not like the spicy omit)
  • – 1 glass of basmati rice
  • – 1 tablespoon extra virgin olive oil

    In a frying pan we are going to poach the garlic, onion and carrot in the oil…sauté well, and when it is poached add the mango, the spices, the pasta of curry and mix well… let it cook for about 4/5 minutes over medium heat. At this point in the recipe is when you can separate a little of the mixture to make the spread (here). we pepper (if you are not much of spicy omit the pepper), add the coconut cream, mix and we have it ready to serve, on a cooked basmati rice (following the manufacturer’s instructions).
