- 1 and 1/2 cup sugar
- 1/2 cup corn honey
- Pinch of salt
- 2 and 1/2 cups peanuts (or other nuts)
- 1 cup of vanilla
- 1 cup of baking soda
- 1/4 cup water
Spray a roasting pan with oil.
Fill a small glass with cold water and place it next to a heat source.
Mix the sugar, corn syrup and salt in a saucepan with 1/4 cup of water.
Over medium heat, bring this mixture to a boil, stirring constantly until the sugar dissolves.
Continue until it boils, stirring constantly.
Every few minutes, pour a few drops of the sugar mixture into the glass of water to check the point called “soft ball” (the texture is not hard but it is not watered down).
Add the desired dried fruit.
Once this mixture turns medium brown, place it over low heat until the fruits are well integrated.
Add the vanilla and baking soda.
BE CAREFUL! Sometimes the mixture foams, at this point.
Put the preparation in the pan.
Work quickly to form a layer about 1.5 cm thick.
Let cool for an hour, then break into pieces.
