Creamy "avocado-coconut" rice

Ingredients

  • Brown rice
  • 200ml coconut milk
  • Oil
  • Cilantro
  • Queso divina teresa

Preparation

Sauté the garlic and add the onion cut into small pieces.

Next add the leek, when the sauce is transparent add the cauliflower and season with salt and pepper.

Let it cook for about 15 minutes and add the rice, let it release the starch and add the coconut milk over high heat. We lower the heat, add salt and stir continuously to make it syrupy. When there are 5 minutes left, we finish with the chopped avocado and vegan cheese. We stir intensely so that all the ingredients come together, we finish with a little more coriander to decorate.
