Cream of zucchini

Ingredients

  • 2 Zucchini
  • 1 Large Potato
  • 1 Onion
  • Soy milk
  • Olive oil
  • Salt
  • Pepper
  • Nutmeg
  • Water

Preparation

Peel, wash and cut the potato, onion and courgette (you can leave them unpeeled) into large pieces.

Fry everything lightly in a little oil.

Add the spices to taste and water, without covering completely, and put on high heat until it starts to boil. Cover and leave for a few minutes over medium heat, until everything is soft.

Whip, adding a splash of non-dairy milk (or a piece of tofu). This will give it a creamier texture, and will help you correct if it has come out too thick.

Serve it very hot, accompanied with some croutons of fried or toasted bread.
