- 1 cup cashew nuts
- 1 ½ cups oatmeal
- 1 tbsp maca powder
- 1/8 tsp cinnamon powder
- 1/8 tsp ginger powder
- 1/8 tsp vanilla powder
- ⅓ tza rasa of dried blueberries
- ⅓ tza rasa of large chocolate chips
- A pinch of Himalayan salt
- ¼ tza maple syrup
- ¼ tza of melted cocoa butter
Crush the cashew nuts and a cup of the oat flakes to obtain powder or at least coarse flour. Mix the other dry ingredients with the previous ones and then add the maple syrup and the cocoa butter, with a wooden spoon, until you obtain a very moist and appetizing dough.
Add the half cup of cocoa flakes remaining oats as needed, until dough is more solid and pliable. Shape them into cookies and let them harden in the fridge, or eat them straight 🙂
NOTES: You can use any nut, seed or grain instead of cashews or oats; you can also use coconut oil instead of cocoa butter; you can use vanilla extract instead of vanilla powder, and you can skip maca if you don’t have any.
