Very good to all! Today I bring you a re-version of a dish that I have been preparing for years and years at home. I’m talking about this couscous with curried vegetables, which is full of flavour, aromas and spectacular nuances.

I tell you: I learned to prepare this couscous with vegetables when I lived in Seville and since then I have not stopped. Why? Because it is very cheap, very easy and quick to make, and it costs the same to do it in small quantities as a whole kilo and store it in the fridge And it lasts a long time and very well in the fridge!


250 g couscous
250 ml vegetable broth
1 large onion
1 red pepper
1 pepper green
1 small courgette
2 garlic cloves
Curry powder
Cumin powder
Cinnamon powder
Olive oil

Step by step

  1. We finely chop the vegetables: the onion, the peppers, the garlic, the zucchini.
  2. Lo sauté in a pan with olive oil, over medium-low heat, so that it poaches gently.
  3. When the vegetables are already golden, add a teaspoon of curry powder.
    Be careful with the quantities of curry, I use a fairly strong one, so my quantities can be smaller than you need. It is important to taste the ingredients.
  4. On the other hand, while we keep the vegetables poaching very gently, we boil 250ml of broth, to which we add 1 small teaspoon of curry and 1/3 teaspoon of cumin, in a medium-sized pot.
  5. When the broth starts to boil, turn off the heat and add the 250g of couscous.
  6. Stir well with a wooden paddle, until the broth has been fully absorbed. If you notice that the couscous is a bit sticky or hard, you can add a little more broth and stir.
  7. Now, add a splash of olive oil, 1/2 tsp of curry powder, a pinch of cumin and a pinch of teaspoon of cinnamon powder.
  8. And we stir very well again.
  9. Now, we take the sautéed vegetables and add them to the pot. Mix very well, add a pinch of salt and mix again.
  10. We test the flavor, and if the curry lacks intensity, it is time to add more. You can also play with the amounts of cinnamon, cumin and salt. And ready to serve! You can eat it hot, cold or warm.
