  • Heat the oil in a pan over medium-high heat. Add besan or chickpea flour, preferably sifted if using besan. Mix and roast for 10 minutes. Stir every 20-30 seconds once the pan is hot. If the flour starts browning too quickly, reduce the heat. The overall mixture should be slightly discolored and smell nutty. For the preparation without oil, roast the flour dry. it takes just as long. You can toast the flour while the condensed milk thickens.
