Cold sesame chickpea croquettes


  • ♥ 2.5 cups cooked chickpeas
  • ♥ chopped parsley or cilantro
  • ♥ 2 thin and drained grated carrots
  • ♥ 65g breadcrumbs
  • ♥ 1/2 cp cumin in powder
  • ♥ 1 tbsp herbs
  • ♥ olive oil
  • ♥ 200g of lightly toasted sesame seeds


1. heat the cooked chickpeas with a minimum of water and salt for 20 minutes. drain and mash them thoroughly. add the grated and drained carrot, the chopped parsley, the breadcrumbs and the dried aromatic herbs. mix well and let cool.

2. wash, drain and lightly toast the sesame seeds in a frying pan without oil until they are roe and crisp, but still light in color.

3. take a little of the chickpea paste, form the corquette and coat it with the sesame seeds. serve.
