Coca de tremp贸

This recipe is one of the most typical of Mallorca and is so popular that practically all ovens and bakeries prepare coca de tremp贸. If you go to Mallorca, do not forget to try it, but ask beforehand if the dough is made with oil, since in some places they prepare it with lard (it is traditional). And if you go through Menorca, you will find the tomato coca which is a real delicacy. When we went on vacation a few years ago, the mother of our friend Anna prepared it for us and we were delighted. The dough is the same as coca de tremp贸, but tomatoes cut in half with garlic and parsley are placed on top. Delicious. Long live the Balearics!

For the dough:
  • 300 g flour white wheat
  • 110 g water
  • 50 g olive oil
  • 50 g sunflower oil
  • 20 g yeast
  • 10 g salt
For the trampoline:
  • 100 g green pepper
  • 100 g red pepper
  • 100 g onion
  • 2 large pear tomatoes
  • 30 g olive oil
  • < li class = "ingredient" itemprop = "ingredients"> 1 tsp sweet pepper

  • 1 cp ground white pepper
  • A pinch of salt
  1. Dissolve the yeast in the warm water.
  2. In a large bowl, place the flour and salt.
  3. Add the water with the yeast and the two types of oil. Mix until all the ingredients are integrated and form a dough.
  4. Let the dough rest inside the bowl covered with a cloth while you prepare the tremp贸.
  5. Clean the peppers and tomatoes and peel the onion.
  6. Chop the vegetables into small squares, about half centimeter Season with a little salt, sweet paprika, white pepper and oil. Reserve.
  7. Grease a tray of coca de tremp贸 or the oven tray with a little oil. Place the coca dough in the middle and spread it out with your fingers, trying to make it as level as possible. Let rest for 20 minutes.
  8. After the rest time, spread the vegetables over the dough.
  9. Finally, bake the coca at 200潞 for 20 minutes.
