Chocolate Pear Pudding


  1. 2 tablespoons oat flour (ground oats)
  2. 1 tablespoon cocoa (or locust bean gum)
  3. ½ tsp baking powder
  4. 1/3 cup applesauce (or vegan yogurt or other fruit puree)
  5. 2 tsp syrup of your choice or pinch of stevia (to taste)
  6. 1 teaspoon oil
  7. approx. 1 tbsp liquid (only if needed for a smoother batter)

  9. 1 small to medium sized pear
  10. Sauce for drizzling

    • In a small bowl, combine the dry ingredients and add the wet ingredients and mix well. The mixture should be thick and fairly smooth (the level of smoothness depends on the type of flour used, my oatmeal gave more texture).
    • Pour the mixture into a large casserole dish ( or small, deep side dish – after inserting the pear, there should be at least 1 cm space under the edge so that the mass can rise easily). Carefully slide the pear into the center of the ramekin so that it is at least half submerged.
    • Cook at 180°C for 10-15 minutes until the pear is tender and golden brown and the mixture is very lightly browned.
    • Serve with fillet or carob, chocolate, yoghurt, cream as you like.
