Very good to everyone! I think today I bring you the perfect recipe to end the summer. You already know that I am an Autumn-Winter person and that the change of season makes me very happy, but I know that for many of you the end of the heat is something sour. So to sweeten this a bit, I bring you a sweet recipe: cold chocolate sponge cake, with pieces of nuts and ice cream on top. Obviously, without eggs and with vegan ice cream.

Ingredients

350 gr of cake flour (it has yeast incorporated)
5 tbsp. soups of vegetable margarine (eye, they may contain milk or palm oil). It can be substituted with 3/4 cup of sunflower oil.
8 tablespoons of cocoa powder (if it is pure cocoa, add less)
250 ml of non-dairy milk
Agave syrup (or your favorite sweetener)
150 gr of nuts
Toppings: vegan ice cream, chocolate syrup, nuts.
Optional: 5 ounces of chocolate
*Recommended: baking paper

Step by step

    1. First, we mix the 350 gr of flour for sponge cake (it has yeast incorporated) with the 8 tbsp. cocoa powder soups. Remember to read the instructions above if you are going to use pure cocoa. 
    2. Cut the nuts into medium pieces and add them to the cake.
    3. Optionally, you can add also chocolate chips.

    4. Mix well and set aside.
    5. On the other hand, melt the 5 tablespoons of vegetable margarine in a pot. If you use oil, skip this step.
    6. Add the melted margarine (or the oil at room temperature) to the sponge cake and mix well.
    7. Add the 250 ml of non-dairy milk and return to mix, until it is as homogeneous as possible.

    8. Place the baking paper on the tray and bake the cake at 180 degrees, lit from below. About 40 min or until a toothpick inserted comes out completely dry.
    9. When ready, remove from the oven and let cool.
    10. Once cool, decorate with generous syrup chocolate and put in the fridge.

    11. When the cake is cold, put a scoop of ice cream on top, some nuts and serve.
