Chocolate and orange cake

Ingredients

  • for dough:
  • 1 and 1 / 2 cup cornstarch (355ml)
  • 1 and 1/2 cup whole wheat flour (355ml)
  • 1 and 1 / 2 cups sugar (355ml)
  • 2 teaspoons baking soda (10ml)
  • 1 teaspoon salt (5ml)
  • 1/2 cup pure cocoa powder (120ml)
  • 1 teaspoon cinnamon powder. (5ml)
  • 3/4 cup soy yogurt (180ml)
  • 1 teaspoon liquid vanilla (5ml)
  • 2 tablespoons balsamic vinegar (30ml)
  • 1 1/2 cups water (355ml)
  • 1/2 cup freshly squeezed orange juice (120ml)
  • 2 tablespoons orange zest.
  • for chocolate icing:
  • 1/2 cup icing sugar (120ml)
  • 1 tablespoon cocoa powder (15ml)
  • 2 teaspoons orange juice (and all the extra orange juice needed to get the required density)
  • 1/4 teaspoon liquid vanilla (1.25ml)
  • for orange icing:
  • 1/2 cup icing sugar
  • 1 teaspoon orange juice (and all the extra orange juice needed to get the required density) < / li>
  • 1/4 teaspoon liquid vanilla (1.25ml)
  • plus:
  • Oil for spreading the mold
  • The mold should be bundt or savari type (round, with an opening in the middle, wider than high)

Preparation

Grease the mold with oil, and lightly sprinkle the powder with cocoa.

Preheat the oven to 180ºc (350ºf in the original recipe)

< p>Mix the flour, sugar, baking soda, salt, cocoa and cinnamon well in a large bowl.

Add the yogurt, vanilla, vinegar, water and orange juice . mix it by hand or with a mixer on low power for 1 or 2 minutes, until everything is perfectly mixed.

Add the orange zest and stir.

Pour it into the prepared mold .

Bake for 30 – 40 minutes (until a skewer inserted comes out clean)

Once baked, let cool in the pan for 10 minutes.

Give it Turn it over and place it on a plate or tray, and let it cool completely.

Once cool, prepare the glazes.

– for the cocoa one, mix in icing sugar and the cocoa in a bowl, in another container (I used a jug to later pour it over the cake more comfortably) pour the teaspoons of the juice, and the vanilla, and to this mixture add the cocoa and sugar by teaspoons, mixing very well.< /p>

– add more teaspoons of orange juice if necessary (there should not be too much liquid, but a somewhat dense mixture).

-once ready decorate the cake with the icing of chocolate , wait for it to set and prepare the orange glaze, just like the previous one; and decorate the cake with it. let it set well and serve.
