The other day my roommate made me vegetable noodles (also known as rice noodles) for dinner combined with broccoli, mushrooms and some vegetables she had in the fridge >. The truth is that before that it had been a long time since I ate them. So the other day I decided to make a version of your recipe, but in my own way and with the ingredients that I had at home.

Ingredients

120 grams of Chinese noodles (rice noodles)
2 handfuls of sliced mushrooms
2 handfuls of assorted mushrooms (I I used a mixture of shiitake, shimeji, crimini…)
1/2 white onion
2 garlic cloves
1 carrot
Soy sauce
Olive oil
Optional:
A pinch of salt (note, some soy sauces are very salty)
A pinch of basil

Step by step

  1. Wash and slice the mushrooms, shiitake and crimini (I left the shimeji whole).
  2. Lightly grease a frying pan with a splash of olive oil. Peel and cut the garlic in half and sauté it in the pan until golden brown.
  3. Next, finely chop the onion and add it. We let it brown.

  4. Add the mushrooms and  sauté for two minutes and cover with a long stream of soy sauce.
  5. Let brown over medium heat until the vegetables are golden.
  6. On the other hand, fill a pot with water and we put it to boil. When it comes to a boil, add the 120 grams of noodles and cook them according to the package instructions, which are usually about 4 or 5 minutes.
  7. Now, peel and chop the carrot into very small cubes. Add it and sauté for several minutes.

  8. When the noodles are cooked, drain them to remove the water and add them to the pan.
  9. Mix and add another splash of soy sauce. We sauté for 2 more minutes.
  10. And that’s it! In the end I added a little mushroom salt and garlic, but it depends on the type of soy sauce, because there are some that are super salty. Also, when serving, I added a little basil and it was perfect.
