Chickpea salad

Ingredients

  1. 1 x can of chickpeas
  2. 1 x carrot (large), grated
  3. 2 x stalks of finely chopped spring onions
  4. Half a small red onion, finely chopped
  5. 2/3 large pickles, chopped
  6. Vegan Mayo
  7. Japanese Ume Plum Seasoning ( just a few shakes…I use Clearspring brand)
  8. Salt and ground pepper to taste

Procedure

  • Wash the chickpeas, drain and pour into a large enough bowl
  • Add all other vegetable ingredients to the bowl and mix well < /li>
  • Add a good dash of mayonnaise and mix. You may want to add more after mixing – it’s really a matter of personal taste
  • Add a few dashes of the plum spice and salt and pepper to taste

  • Serve alone, or between slices of crusty bread or slices of toast… Add lettuce or arugula, tomato or even a slice of cheese if you like

It should last a day or two in the Fridge… Mine is usually gone by the next day at the latest!
