Very good to all! Today I come with a very improvised but delicious recipe. I bring you some protein chickpea croquettes

As I have already commented many times on this blog, legumes are a very interesting source of protein, for vegans and non-vegans. Also, keep in mind that they are very cheap, healthy, accessible (we can find them in all grocery stores) and extremely versatile (you can prepare everything from croquettes to pâtés, stews, soups or burritos).

Ingredients

400 gr of cooked chickpeas
1 onion
1 garlic
1/2 lemon
1 tablespoon of flour of chickpeas
Soybean flakes (you can substitute it with panko)
Rice flour (you can substitute it with wheat flour)
1/3 cup of water
Parsley in flakes or powder
Cumin in powder
Sweet paprika powder
Olive oil
Sesame seeds
Sunflower oil for frying
Optional: mix of spices with powdered garlic, basil and sea salt

Step by step

  1. Serve the 400 gr of cooked chickpeas in a large bowl. Reserve.
  2. On the other hand, peel and cut the garlic into slices, and sauté them in a pan with olive oil.
  3. When they begin to colour, peel and chop very finely the onion and sauté it also in the pan.

  4. Meanwhile, we add to the chickpeas a long squeeze of lemon, 1 small teaspoon of sweet paprika, 1 of parsley and 1/2 of cumin powder.
  5. On the other hand, I added a mix of spices that also has garlic powder, basil and sea salt. You can add them to taste.
  6. We also add two pinches of sesame seeds.

  7. Add the sautéed chickpeas and mash with a fork until you get a more or less homogeneous paste, creamy, but preferably with small pieces.
  8. On the other hand, in a small bowl, mix 1 tsp of sweet paprika with 1 tbsp of wheat flour and 1/3 cup of water.
  9. Beat well with a fork until there are no lumps. With this we will substitute the egg in the batter.

  10. We wet our hands and take a piece of dough. With wet hands, we shape it into a ball. The humidity helps us to prevent the dough from sticking to us.
  11. We introduce it into the mixture of chickpea flour, water and paprika and place it on top of the protein flakes with which we will coat. It’s the same process if you use panko.
  12. We repeat the process until we finish with all the balls.

  13. To finish, submerge in the chickpea flour again, being careful not to dislodge the flakes, and coat with the rice flour. Making sure it is well covered everywhere.
  14. Now, in a non-stick frying pan, put 1 finger of sunflower oil and heat it very well.
  15. When it is hot, put the chickpea protein croquette inside and, when it is golden on the bottom, we turn it over.
  16. Brown it all over, carefully.
  17. And that’s it! We remove them and they are ready to eat.
