Chickpea Kabocha Fries. Chickpea flour fries made from a batter of chickpea flour and roasted pumpkin + spices. Baked fries, fried or grilled! Gluten-free vegan recipe.  Makes 14 to 18 fries


  • 1/2 cup (60 g) Farine de pois chiche farine de besan/chickpea. You can use the farine of the pois chips
  • 1/3 cup (300 g) bien écrasé Rôti Courge Kabocha ou toute autre courge or 1/3 cup de püree de patates douces< li class="wprm-recipe-ingredient" style="list-style-type : disque ;"> 3/4 cup (< span class="wprm-recipe -ingredients-quantity">187.5 ml) eau
  • 1/3 cc (0.33 thé) sel span>
  • 1/2 tsp (0.5 càc) asaisonnement ranch Ail, oignon, aneth, Persil , ciboulette and a touch of life your choice)

  • Preparation

  • Put all ingredients in a bowl or directly in the pan and whisk.
  • Heat pan over low-medium heat and continue beating to combine all ingredients.
  • Whisk for 4-6 minutes until the dough starts to thicken and firm. You will feel the stiffness and the dough will not move easily.
  • Place the firm dough on parchment or greased baking sheet. Quickly spread the dough out with a greased spatula, keeping it 1/4-1/2 inch thick, and let it rest in the fridge for 1 hour.
  • Cut the dough into strips. (At this point the strips can be frozen. Thaw and fry/bake.)
  • Then pan or continue cooking or frying the grill. To grill, brush the fries with some oil.
  • Fry 2-3 minutes on each side over medium heat -vif.
  • Preparation: Fry on low for 4-5 minutes, then fry on high for half a minute to a minute (depending on how crispy you want The french fries). The fries can also be baked or grilled without oil.
  • I sprinkled Cajun spices on top and served with the Sriracha.
