We already have another recipe for vegan and gluten-free crepes on the blog, but they were sweets and this time I wanted to prepare something salty for breakfast, a snack or even to eat together with a salad or some vegetables.

They have a very rich flavor, between a savory crepe and a French omelette in a vegan version thanks to the chickpea flour, which in fact I already used to make my vegan potato omelette.

  • 1 taza de harina de garbanzo (130 g)
  • 1 y 1/4 tazas de agua (315 ml)
  • 1 cucharada de zumo  de limón
  • 1/2 cucharadita de sal

Instructions

  1. Put all the ingredients in a bowl and remove with the help of some rods or a fork until they are perfectly integrated. If you want you can also use a mixer to make your mixture perfect.
  2. Let the mixture rest in the fridge for 30 minutes.
  3. < li id="instruction-step-3">If your pan does not stick you can not grease it, although unless it is very new or of high quality, I recommend that you put a few drops of oil on it and spread it with a paper napkin to remove the excess.

  4. Put the pan on the fire and when it is hot, add 1/4 cup or 4 tablespoons of the batter (this depends on the size of the pan, ours was about 20 cm or 8 inches). Turn and move the pan until the bottom is completely covered.
  5. Cook over medium heat or until the batter darkens from browning and turn the crepe over with watch out. The ideal is to loosen it a little on one side with a spatula and then pick it up with your fingers and turn it over, but if you don’t feel like scorching yourself, you can also use the spatula. If you see that it is not browned yet, let it brown a little more on that side.
  6. Brown the crepe on the other side and repeat the process until it is not browned. dough.
  7. Serve immediately with your favorite ingredients (I added hummus, cherry tomatoes, black olives and dried oregano). You can also store the crepes in an airtight container in the fridge for about 5-7 days.

Notes

  • Lemon juice can be substituted for lime juice.
  • I haven’t tried this recipe with other flours, so I don’t know if it will work.
  • To make crepes it is important to use a pan that is in good condition so that they do not stick and it is easier to make them.
  • The first crepe sometimes goes wrong, don’t worry, is normal.
