If you are a fan of cauliflower rice, you can prepare large quantities for the whole week and make different recipes on the March. For example, this cauliflower fried rice takes about 10-15 minutes to prepare and is finger-licking good.

Fried rice is one of my favorite Asian recipes and the cauliflower version is also spectacular, it is also lighter and a very interesting way to incorporate more vegetables into our diet.

Ingredientes

  • 1 cabeza de coliflor grande
  • 1 cucharada de aceite de oliva virgen extra
  • 2 dientes de ajo, troceados
  • 1/2 cebolla, troceada
  • 1 zanahoria, pelada y troceada
  • 1/2 taza de guisantes congelados o de bote (70 g)
  • 1/4 cucharadita de sal
  • 1/8 cucharadita de pimienta negra molida
  • 1/2 taza de maíz congelado o de bote (70 g)
  • 1 cucharada de tamari o salsa de soja
  • 1/2 cucharadita de aceite de sésamo (opcional)

Instructions

  1. Follow the instructions to make the cauliflower rice. Reserve.
  2. Put the oil in a pan and when it is hot add the garlic, onion, carrot, peas, salt and pepper. Stir and cook over medium-high heat until just starting to brown (about 5 minutes).
  3. Add the corn, stir and cook for a couple of minutes.
  4. Add the cauliflower rice (which you have previously cooked following this recipe) and stir so that the ingredients are well integrated.
  5. Add the tamari or soy sauce, stir and cook for about 2-3 minutes, stirring occasionally.
  6. Add sesame oil (optional), stir, and serve immediately. You can store leftovers in the fridge in an airtight container for about 3-5 days or in the freezer for 1-2 months.

Notes

  • The preparation time does not include the time it takes to prepare the cauliflower rice.
  • You can use any type of oil or replace it with a little water or vegetable broth.
  • Use whatever vegetables you like or those you have on hand in your kitchen.
  • You can also add spices and/or or herbs of your choice.
  • If you don’t eat soy, you can substitute the tamari or soy sauce for coconut aminos or a little salt to taste.
  • Sesame oil is totally optional, you can eliminate it or substitute it with another oil you have on hand.
