1. ¾ cup/100g cashews, soaked then drained (soak overnight for a creamier mayonnaise; otherwise, at least 2 hours)
  2. ¼ cup/60ml avocado oil or flaxseed oil (I prefer avocado oil for flavor)
  3. ¼ cup/60ml d water
  4. 1 tablespoon lemon juice
  5. 2 teaspoons Cider vinegar
  6. ½ tsp salt
  7. ½ tsp mustard powder
  8. ½ clove fresh garlic, chopped or ¼ tsp (pinch) garlic powder
  9. Celery leaves or fresh parsley for garnish (optional)


Mix the ingredients for the mayonnaise and add to the bowl.
