Cashew yogurt with red fruit jam

Ingredients

  • For the yogurt base:
  • 150 g of raw cashews, soaked overnight or at least 4 hours.
  • 2 frozen bananas
  • 175 ml water or water coconut (a little less than a normal glass)
  • for berry jam:
  • 150 gr. of various berries: blackberries, blueberries …
  • 2 tbsp agave or sugar syrup (optional)
  • ½ cdta vanilla extract or vanilla powder.

Preparation

. Beat all base ingredients in a mixer on medium-high speed for a couple of minutes. at first the cream will stay on the walls of the mixer. stand it up a couple of times and use a spatula to push it down.

. reserve in the refrigerator.

. For the jam, put the ingredients in a non-stick saucepan, put it over high heat until it boils and lower it. simmer about 5 minutes. Depending on the ripeness of the fruits, you may need a couple more minutes.

. let it cool.

. put a little of the jam in the bottom of the cups, add the cashew yogurt and decorate with more jam or berries.
