This carrot salad has been a real discovery for us, it seems incredible that it only has four ingredients because it has an impressive flavor. It can be prepared in 10 minutes at most and is ideal for people with anemia, as the walnuts, garlic and carrots help us fight it.

We have used veganesa to dress our salad, but you can also use mayonnaise or if you prefer a lighter and more traditional option, add a little olive oil, salt and vinegar or lemon juice.



  • 2 zanahorias
  • 1 diente de ajo
  • 3 nueces
  • 1 cucharada de veganesa


  1. Peel the carrots and cut them with help of a peeler so that thin slices come out. We chop the sheets so that they are left in the form of strips. If you don’t have a peeler, you can make the strips directly with a knife.
  2. In a bowl, put the carrot, the finely chopped clove of garlic, the chopped walnuts and a tablespoon of vegan. We mix all the ingredients.
