Ingredients
- 1 tbsp olive oil
- 120 ml almond milk (or plant-based milk of your choice)
- 70g cashew nuts
- 1 tablespoon Dijon mustard
- 1 clove garlic, chopped
- 1 tablespoon capers
- A dash of soy sauce
- Juice of 1 squeezed lemon
Preparation
- Place all ingredients in a blender and blend until smooth
Store any remaining dressing in an airtight container. To be consumed preferably during the week.
