Burrito vegano en bol

An advantage of eating the burrito in a bowl is that we save the carbohydrates of wheat flour tortillas, which is an excellent option for those who are in the process of losing weight. What better way to take care of your diet than with a fun dish? It is also a good option for celiac people.

Ingredients
  • 400 g beans in sauce
  • 200 g white rice
  • 100 g canned sweet corn
  • 4 pear tomatoes
  • A bunch of fresh cilantro
  • ½ cc of ground cayenne
For the tomato sauce (optional)
  • 400 g of crushed tomatoes
  • 60 ml. of oil
  • 1 garlic
  • Salt
Preparation
  1. We will start by boiling the white rice. Once boiled, we drain it and let it cool.
  2. If we only have beans or cooked pinto beans, we prepare the sauce at home. To make the homemade tomato sauce, first mince the garlic. In a hot skillet, add the oil and garlic. Sauté for half a minute, preventing the garlic from burning. Then add the crushed tomato (carefully because it splashes). Lower the heat to a minimum and fry until the sauce reduces and thickens. Once we have the sauce ready, we add the beans or the cooked broad beans and mix.
  3. Cut the tomatoes in quarters and cut the placenta. Cut the tomato into small cubes and add to the bowl.
  4. Chop the fresh coriander leaves and reserve.
  5. In a bowl, serve the beans in sauce and add the boiled rice, the corn (previously drained), the tomato and the chopped cilantro. Finally, we sprinkle some cayenne powder.
  6. Serve hot.
