Buddha bowl of quinoa and roasted vegetables

Ingredients

  • 200g soaked quinoa
  • 2 carrots in sticks
  • 1 avocado
  • 1 purple onion
  • Cilantro
  • 1 diced eggplant
  • 1 diced zucchini

Preparation

Cook the quinoa and strain. Place the vegetables in a bowl with a little oil, salt and pepper.

They have to brown well. mix the quinoa, vegetables and season with sriracha sauce, salt, pepper and chopped fresh cilantro.

Place diced avocado, done!
