Breaded chicken skewers & Vegan BBQ sauce with honey


2 Packs Like Meat Breaded Chicken (180gx 2)
Vegan Honey BBQ Sauce (recipe below)
Vegetables of your choice, per pepper , red onion, zucchini and small tomatoes.

Vegan honey BBQ sauce:
200 g ketchup
100 g vegan honey, alternatively use agave or maple honey syrup< br> 50 g apple cider vinegar
3 tsp brown sugar
1 tsp liquid smoke
1 tsp paprika powder
½ tsp chilli powder
1 tsp onion powder
¾ tsp garlic powder
½ tsp salt< br > ½ tsp ground black pepper
Some vegetable oil


Thaw similarly breaded chicken fillets.

Prepare Vegan Honey BBQ Sauce:
Add ketchup, honey, vinegar and brown sugar Measure saucepan into small bowl and heat gently, stirring, until smooth. Stir the liquid smoke and remaining ingredients into the ketchup mixture, reduce the heat and simmer until thickened, about 20 minutes.

While the sauce is simmering, coarsely chop the veggies. Brush with some oil.
Carefully cut each breaded chicken fillet into 5-6 pieces with a sharp knife and place in a large bowl/pot.
When the vegan BBQ sauce with honey is ready, drizzle over the breaded chicken pieces and toss gently to ensure they are evenly coated.

Skewer the breaded chicken, coated with vegetables and gravy. (If using wooden skewers, moisten them first to prevent them from burning when grilling.)
Grill the skewers until tender, hot and even and the vegetables are well charred around the edges, about 20 minutes is.

< p>If the weather is not suitable for grilling, you can also prepare the dish in a casserole dish in the oven preheated to 200°C in the middle of the oven.

Serve Like breaded chicken skewers with a fresh summer salad and boiled new potatoes mixed with plant-based butter and garnished with chopped fresh chives.
