blueberry delight


  • base:
  • 4 cups blueberries ( or strawberry raspberries)
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 1/4 cup water
  • Juice of 3 lemons
  • Peel of 1 lemon
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • dumplings:
  • 1 cup and 1/2 flour
  • 2 Tbsp sugar
  • 2 tbsp baking powder
  • 1/2 tsp salt
  • 3 tbsp margarine cut into small cubes
  • 3/4 cup soy milk (vanilla)
  • Soy whipped cream or soy ice cream


To make the base, mix all the ingredients in a large pan.

Bring to a boil over medium heat – stir for about 5 minutes. Reduce heat and cook until fruit is tender.

The mixture should thicken slightly after about 10 minutes.

While the base is cooking :

Beat together the flour, sugar, baking powder and salt in a medium bowl.

Add the margarine to form a sand with your hands .

Add the soy milk and mix until it forms a dough.

Pour the mixture over the base by tablespoons.

Reduce the heat to low.< /p>

Let cook until the dough is firm and, when inserted with a knife, it comes out clean- about 20 minutes.

Serve with whipped soy cream or a scoop of ice cream soy.
