Blackberry and cashew cheesecake


  • For the base
  • 100gr of dates
  • 100gr of raisins
  • 100g of sunflower seeds
  • 50g of nuts
  • 100g of peanut
  • For the cream
  • 200g cashew nuts
  • Lemon zest
  • 1 lemon juice
  • 100gr coconut milk
  • 100gr coconut oil
  • Pinch of salt
  • 50g sugar
  • 1 tbsp vanilla essence

  • 100g red fruit
  • optional: brown sugar


Wash and soak the cashews for 24 hours.

Process the dates, raisins, sunflower, walnuts, peanuts and assemble the base of the cake . blend the cashews with the lemon zest, lemon juice, pinch of salt, sugar and oil and coconut milk.

Freezer. dump on the base. Cook the red berries with 1 tablespoon of sugar until you get a jelly and decorate the cake.
