bean nuggets


  • 1 to 2 cups cooked beans
  • 1 tbsp olive oil
  • A pinch of sea salt, pepper and cumin
  • ½ piece of white onion
  • 2 1 piece of orange sweet potato
  • 1 cup of oatmeal or wholemeal breadcrumbs
  • Cilantro and parsley
  • 1 to 2 cloves garlic
  • 1 tbsp extra virgin olive oil
  • 1 to 2 tbsp tahini (optional)


. The first step is to prepare hummus with the beans and the cooked sweet potato. we just have to take them to the processor along with all the ingredients, except the oatmeal.

. When we have the hummus, we will proceed to form the nuggets and coat them with oatmeal or breadcrumbs.

. We arrange the nuggets in a refractory and take them to the oven for 20 to 30 min or until they are crispy (make sure that both sides are baked by turning with a spatula).

. prepare a delicious salad and accompany it with your nuggets, a little hummus and guacamole, if you wish.
