Banana pudding


  • 1 cup sour cream (vegan)
  • 1 cup vanilla
  • 3 ripe bananas pureed
  • 2 cups flour
  • 1 and 1/4 cups sugar
  • 2 tbsp cornstarch (cornstarch)
  • 1 and 1/4 tbsp baking powder
  • 1 so-called baking soda


Preheat oven.

Beat all wet ingredients in a bowl until smooth. Reserve.

Beat the dry ingredients.

Spray a pudding pan with oil and spread a little of the dry ingredients mixture on top. Anything that does not stick to the mold should be poured into the bowl.

Mix wet and dry ingredients, add more soy milk if needed.

It should be heavy but not dry.

Pour evenly in the pan and bake for 50 minutes or until a toothpick inserted comes out clean. Let cool completely before removing from pan.

Serve with powdered sugar and fresh strawberries
