This banana bread is finger licking good! It is a 100% vegan recipe, light and absolutely delicious, as it has a spectacular flavor. I usually have it as a healthy snack or snack or at breakfast with a hot glass of vegetable milk.

Plus, it’s perfectly sweet (not too little, not too much), and the combination of banana and cinnamon is one of my favorites. It reminds me of when my mother used to make this recipe when she was little and the kitchen would fill with that comforting smell.

Instructions

  • Preheat the oven to  180ºC or 350ºF.
  • In a large bowl, add the vegan butter, sugar and vanilla extract and mix&nbsp ;until you get a creamy dough.
  • Add the mashed bananas, vegetable milk and flax eggs and stir.< /li>
  • Mix the dry ingredients (flour, baking powder, cinnamon powder, and salt) in a medium bowl.
  • Add the dry ingredients to the creamy mixture and stir until well combined.
  • Transfer the mixture into a 23×13 cm (9×5 inch) pan previously lined with parchment paper or spread a little oil inside the pan so the banana bread doesn’t stick (I use oil coconut).
  • Pour the batter into the pan and bake for 50-60 minutes (mine was done in 60 minutes). Stick a toothpick in the center of the bread and if it comes out clean it means it’s done. Cover with foil if the bread is brown on the outside but a little raw on the inside.
  • Let cool for 15 minutes before transferring to a sheet pan to cool completely. You can also drink it hot.
  • Serve immediately with a glass of milk coconut, almond milk, oat milk or even golden milk

Notes

  • The key to making this recipe is to use very ripe bananas.
  • I’ve only ever made vegan buttered banana bread, but you probably will. If you use oil it also works well (I would use coconut oil).
  • You can use any type of sugar.
  • If you want, you can add another type of flour, although in that case you may have to add more or less quantity.
  • You can customize the dough with your favorite ingredients: nuts, vegan chocolate chips, raisins… Whatever you like!
