- 2 courgettes
- 4 mushrooms
- 1 small onion
- 1 clove of garlic
- 80 gr. vegan cheese
The first step is to preheat the oven to 200ºc.
The next step is to wash the zucchini and cut off the ends. after this, it is cut lengthwise and emptied with the help of a teaspoon, reserving the inside of the courgette for later use.
Wash the mushrooms and chop finely. the onion is peeled and cut into small pieces. Peel the garlic and chop finely (in my case I used a garlic press).
Put the zucchini, mushrooms, onion, garlic in a bowl and season to taste.
Mix all the ingredients well and put them inside the courgette.
The stuffed courgettes are arranged on the oven tray (for which we will use parchment paper), cheese is sprinkled on them and they are baked at 200ºc for about 25 minutes until it is au gratin.
These baked stuffed zucchini look very good, right?.
