Ingredients
- For Pizza:
- 1 dough pizza
- 150 g cooked and trampled azuki beans / beans with a fork
- 200 g steamed broccoli without the hardest stalks y troceado
- 2 tomatoes medium thinly sliced
- 1 large onion cut into rings
- Homemade vegan blue cheese (quantity to taste) < / li>
- For homemade vegan blue cheese:
- 50 g raw macadamia nuts < / li>
- 50 g raw cashew nuts
- 200 ml oatmeal cream
- The juice d and half a lemon
- 1/2 glass of water
- 10 g of brewer’s yeast (about 6 tablespoons full) li>
- Salt to taste
Preparation
For the vegan cheese:
Crush the cashews with the walnuts and the brewer’s yeast
When everything is ground/crushed, add the water and the lemon juice and beat again to obtain a homogeneous mixture
Heat the oatmeal cream in a saucepan heat and add the previous mixture
Let it boil for 1-2 minutes, stirring frequently so that the mixture reduces a little and thickens
If you prefer a lighter texture, type “sauce” add more cream and let the mixture cook for less time
For the Pizza:
Heat the oven to 220º C
Roll out the pizza dough and prick it with a fork to prevent it from swelling during cooking
Put the dough in the middle of the oven and let it cook for about 10 minutes or until begins to take color without letting it brown
Remove the dough from the oven and cover the base with the tomato slices
Add the broccoli, azuki and onion rings
Cover with the vegan cheese and place the pizza in the middle part of the oven
Cook the pizza for 15 minutes at 220º C or until you see that the cheese and the dough are golden
