Avocado and piquillo pepper salad

Ingredients

  • We need (for 8 peppers)
  • 8 whole piquillo peppers
  • 1 avocado maduro
  • 1/2 green pepper
  • 1/4 red pepper
  • Extra virgin olive oil
  • Apple cider vinegar
  • Sea salt
  • Dried rosemary
  • Arugula

Preparation

Mince all the vegetables and the avocado, dress with the oil, vinegar and salt to taste. Stir well to incorporate the flavors and fill the peppers, taking care not to break them.

We place them around the plate, place arugula and what is left over from the salad on top, sprinkle with dried rosemary ( you can change it for seeds and other herbs).

and enjoy all the senses!!
