Artichoke stew


  • 4 beautiful artichokes
  • 1 medium potato
  • ½ onion
  • 3 carrots
  • 2 garlic
  • 1 bay leaf
  • < li itemprop = "ingredients"> Aove (extra virgin olive oil)

  • Pepper and salt
  • optional: cooked bulgur, noodles or brown rice


1. Crush the garlic without peeling it. peel and chop the onion

2. Peel the carrot (if it is not organic) and chop it.

3. peel the potato and cut it into pieces.

4. clean the artichokes as I explain here

5. heat a stream of extra virgin olive oil in a pot and sauté the garlic, onion and bay leaf for about 5 minutes.

6. add potato and carrot. sauté 5 more minutes.

7. add the artichokes in halves and add a liter of water approx. plus salt and pepper.

8. cook until everything is tender (20 to 30 minutes). add the rice, bulgur or cooked noodles at the end if you wish.

9. let rest for a few minutes off the heat and serve.
