Apple Cinnamon Mini Donut with Lemon Glaze


  • 80 gr wheat flour
  • 10 gr margarine
  • 30 gr brown sugar
  • 100 gr apple compote
  • 30 ml soy milk
  • 1/2 tsp baking soda
  • Whisk impeller
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla essence
  • For icing
  • 6 tbsp icing sugar
  • 2 tbsp soy milk
  • 1-2 tbsp lemon juice


We prepare the dough for our donuts. In a bowl, mix the melted margarine with the sugar, add the applesauce, vanilla and milk. beat well with the rods until everything is well integrated. set aside.

In another bowl, mix the flour with the yeast, bicarbonate of soda and cinnamon. Little by little we add the dry ingredients to the wet ones until we obtain a homogeneous dough.

At this point there are two options, the easiest and fastest option for those of us who have a donut-maker and the oven option with a mold for donut.

Donut-maker option

Follow the manufacturer’s instructions. in my case: heat the donut-maker, lightly grease the cavities with paper and oil. fill with the dough until a little less than the edge. lower the lid and leave 7 minutes. lift, remove and let cool on a rack while we repeat the operation.

Oven option

Preheat the oven to 175º. fill the donut mold to a little less than the edge and bake for 10-15 minutes at medium height. Let cool on a wire rack.

While they cool, prepare the glaze. mix the icing sugar with the soy milk, add the lemon juice and mix again. The consistency should be similar to that of condensed milk.

We coat one side of our mini donuts with the glaze (two for those with a sweet tooth) and let it rest until it dries. If you are inspired you can add some decoration before it dries, like some colored sprinkles, or some crocanti. enjoy! >^_^<
