Ice creams and popsicles are a delicious way to cool off in summer, the problem is that they are full of sugars, dyes, additives and vegan options are very limited. The good news is that you can make them at home, it is very easy and cheap and you can use your favorite ingredients.

It is the first time that I prepare popsicles with chocolate coverage because I thought it would be a very complicated process, but the truth is that no, they came out right the first time and the chocolate was very rich and crunchy.

Para los polos:

  • 2 plátanos
  • 1 taza de leche de almendras (250 ml)
  • 1 cucharada de sirope de arce
  • 4 cucharadas de crema de almendras

Para la cobertura:

  • 3 cucharadas de aceite de coco
  • 1/3 taza de chocolate negro (100 g)

  1. Whip all the popsicle ingredients in a mixer until well combined.
  2. Spread the mixture between the molds and put them in the freezer for 45 minutes.
  3. Take out the popsicles and place the sticks. Some molds have a lid included, in that case you can put it at the beginning, although I personally like the way the wooden sticks look better.
  4. Put them back in the freezer for about 3 hours or until completely solidified.
  5. To make the topping, place the oil and chocolate in a saucepan over low heat until the chocolate melts . Remove the mixture from the heat while unmolding the popsicles.
  6. To make the topping, pour some of the mixture onto a plate and coat the popsicles on both sides. If you’re going to add almond pieces, hurry up because it dries out quickly.
